About this deal

Khan's cuisine reflects that of the Mughal Empire, which used a subtler range of spices than common in later Indian cooking. In this book, Asma reveals the secret to her success, telling her immigrant's story and how food brought her home. The book begins with Asma’s introduction to this personal history, before discussing a number of techniques essential to elevate your Indian cooking, from the proper browning of onions to the use of chillis and spices. She was been voted ‘Female Entrepreneur of the Year’ at the Asian Restaurant Awards and ‘Entrepreneur of the Year’ in the Asian Women of the Year Award. In 2015, she opened a pop-up in Soho to much acclaim, and Darjeeling Express the restaurant opened its doors in June 2017, perfectly positioned in Kingly Court in central London. Asma has interspersed her recipes with family anecdotes, which I think adds to the content of the book. Zum ersten Mal ist mir Asma Khan in einer Doku-Reihe aufgefallen, die den Werdegang außergewöhnlicher Küchenchefs/-chefinnen beschreibt. The recipes pay homage to her royal Mughlai ancestry and follow the route of the Darjeeling Express train from the busy streets of Bengal.Divided into chapters devoted to dinners-a-deux, family meals, cooking for friends, and celebratory feasting, the book draws both from Asma’s diverse – and noble – family heritage (Rajput, Bengali and Bihari, with close links to Hyderabad) and her time in cosmopolitan (then) Calcutta; a city of notorious epicures, where good food is universally adored and embraced irrespective of its origin. Founder, author and chef Asma Khan lives in London, where she runs the famous restaurant Darjeeling Express, a restaurant run entirely by women where food is served family-style and people gather to enjoy good food and fellowship with friends that is enhanced by the colors and flavors on the table before them. Everything looks simple yet complex, lot's of flavor building with spices and techniques that are explained beautifully. You shape the meatballs and then cook them in the sauce itself, not frying or baking them beforehand, and I was worried that my meatballs would fall to slush, but the recipe was easy to do and the instructions easy to follow. Teaching herself to cook helped with the homesickness, and then, during several trips back home, she gradually learned the recipes that had been in her family for generations, not only from her mother but from her grandmother, aunts, cousins, family friends and the cook that worked for her parents for many decades.Since I read cookbooks like novels and Asma loves to tell stories, I think I need to pick up this book.
