About this deal

One of the earliest plum pudding recipes is given by Mary Kettilby in her 1714 book A Collection of above Three Hundred Receipts in Cookery, Physick and Surgery. Prior to the 19th century, the English Christmas pudding was boiled in a pudding cloth, and often represented as round. By the 19th century the ingredients were more or less standardized to suet, brown sugar, raisins and currents, candied orange peel, eggs, breadcrumbs, nutmeg, cloves, allspice and plenty of alcohol. Christmas pudding is sweet, dried-fruit pudding traditionally served as part of Christmas dinner in Britain and other countries to which the tradition has been exported.

The recipe was a phenomenal success, as thousands of requests for the recipe flooded the EMB office. It was not until the 1830s that a boiled cake of flour, fruits, suet, sugar and spices, all topped with holly, made a definite appearance, becoming more and more associated with Christmas. Another interesting point in the history of plum pudding occurred in 1647, when Oliver Cromwell came to power in England. Some households have their own recipes for Christmas pudding, which may be handed down through families for generations. In her bestselling 1845 book Modern Cookery for Private Families, [14] the East Sussex cook Eliza Acton was the first to refer to it as "Christmas Pudding".Second, the ingredients used to make the pudding had to be changed to reflect the ideals of the Empire. It was made as bread pudding, by soaking stale bread in milk then adding suet, candied citron, nutmeg, eggs, raisins and brandy. We won't go until we get some, we won't go until we get some, we won't go until we get some, so bring it right here. Plum pudding was banned, along with other Christmas traditions including yule logs, Christmas carols, and nativity scenes.

Fifty years later, England’s first German-born ruler, George I, was styled the “pudding king” after rumors surfaced of his request to serve plum pudding at his first English Christmas banquet. The final recipe included Australian currants, South African stoned raisins, Canadian apples, Jamaican rum and English Beer, among other ingredients all sourced from somewhere in the Empire. A recent history cheerfully notes that the game of “snap dragons,” in which children compete to pluck raisins from the flaming brandy, likely has origins with the Celtic Druids. By the end of the 16th century, dried fruit was more plentiful in England and plum pudding made the shift from savory to sweet.
