When the caramel is ready, you need to work fast as the caramel will start to set once you turn the heat off, so pour into ramekins immediately! As soon as you have poured the caramel, place the pan in hot soapy water for ease of washing later. You can find recipes to make some of my other popular Easter eggs using the links below. I will be adding links as I get the recipes published. If you have used really thin (viscous) chocolate or candy melts, you may want to set the mold upside down on a parchment paper-lined baking sheet before chilling so that the chocolate doesn't sink to the bottom of the mold. ALWAYS strain the custard mixture after you have combined the eggs, cream, and milk. This will ensure you have a silky smooth custard with no bits of curdled egg

Now, this is the hardest bit of the whole recipe. When cool, cover with some plastic wrap and leave in the fridge to chill for a minimum 3-4 hours. As soon as it starts to bubble, add 5 Tablespoons of boiling water (I measure the water into a cup so I can tip it in one go). Some people like to add salt to cake recipes and some don't, so I'll leave that up to you as it won't affect the bake. The general advice is to add 2 teaspoons baking powder (a measuring teaspoon, not the kind you stir your coffee with) per every 200g plain or all purpose flour.
