With: Cachaça, orange curaçao liqueur, sweet vermouth, Angostura Aromatic Bitters, ginger ale and cola. After the shaking/stirring, it’s time to pour into your favourite glass. Make sure you get a good mix of lime, ice and liquid. Cachaça is a grassy, vegetal spirit. First and foremost, it should reveal the sugarcane taste and aroma, and then the fermentation.

Unlike a lot of the cachaca’s I have been reviewing, this cachaça is produced on a multi column still. Cachaca 51 are a big brand. So thy produce a LOT of cachaça. Artisenal production could not sustain such high volumes per annum. By law, the cachaça congener concentration must be between 200-650 milligrams by 100 milliliters of alcohol. But if I could choose any of the reasonably priced Cachaça, I’d have to go with Ypioca. If sunshine could be distilled into a hard liquor, it would take the form of Ypioca Prata. If it wasn’t a tad risky, I’d mainline it. Man, I love me a good bottle of Ypioca!

So what’s a good Cachaça? The best definitely tend to come from the state of Minas Gerais. They make a mighty fine Cachaça in Minas.Unlike vodka, cachaça goes through a single batch distilled process, keeping a rich and flavorsome concentration of congeners in the final product. On the other hand, cachaça is made from freshly pressed sugarcane juice, and it must be produced in Brazil, otherwise, it is not considered cachaça. (Rum can be produced anywhere in the world.) The Reserva 51 range is the companies more premium offerings. They have 3 cachacas in this series. They have this Reserva 51 Unica (aged in ex-bourbon casks), Reserva 51 Singular (ex-bourbon and Amburana wood) and a Reserva 51 Rara (ex-bourbon and ex-South American Wine Barrels). At the very top of the range they have a Reserva 51 Carvalho Americano (ex-bourbon) Take your muddler and give it all a good smooshing. Don’t destroy the limes… just encourage them to release their heavenly juices.

Cachaça was then a perfected version of their drink cacho but made with a plant that was abundant in the country, sugarcane. Therefore, the name cachaça makes reference to this Portuguese spirit. The different names of cachaça around Brazil – Courtesy of Mapa da Cachaça Other cachaça names Miszputen, Milton (2007). "Simply Cachaçça, Simply Brazil". Gastronomica. 7 (2): 90–93. doi: 10.1525/gfc.2007.7.2.90. Every time I mention this Brazilian drink to international friends, they ask me, “what kind of liquor is cachaça?” Cachaça, pronounced Kashasa, is a hard liquor (between 38% and 54% alcohol) and made from the distillation of fresh sugarcane juice. It’s been made since the 1500s, and it’s the 3rd most consumed spirit in the world (with an estimated 99% drank in Brazil… which shows how much they enjoy a good tipple). Further sips of this cachaça – you end up getting pretty much everything that was on the nose. It’s really quite a complex spirit. Obviously at 40% ABV and column distilled it’s not a rip roaring monster of a drink but I really like it’s wonderful balance and easy going nature. There’s a lot of flavour here its just all nicely balanced and politely waits it turn.

So there you go they are quite defensive about their production! Clearly they have heard the criticisms quite often! The major difference between cachaça and rum [20] is that rum is usually made from molasses, a by-product after a refinery boils the cane juice to extract as much sugar crystal as possible, while cachaça is made from fresh sugarcane juice, fermented and distilled. [21] Some rums, in particular the rhum agricole of the French Caribbean, are also made by the latter process. Cachaça is also known as Brazilian rum. [9]

This does not apply to large manufacturers, always monitored by authorities and investing in the sophistication of its products. You can’t really go wrong with a bottle of 51. It’s still pretty cheap, but the lasting damage is minimal. It gives a nice round taste to the caipirinha but doesn’t overpower it.Despite these achievements, the industrialized cachaças are still victims of prejudice. Such pet peeve to cachaça is due to some myths. The most widespread points are that the distillates produced in large volumes, would be lower (in ABV) than those of (pot) stills. This is because the stainless steel columns commits some sensory characteristics of the final product. The columns, in fact, are 100% stainless steel, but only externally.
