About this deal

This recipe has been in our family for years. In fact, many of my birthday cakes as a child were made using this very recipe. It has now become my go-to when I bake a choccy cake for my own children.

Place butter in a small mixing bowl and beat with an electric beater until butter turns white. Gradually add the icing sugar and milk, beating constantly until all mixed together. Mixture should be smooth and easy to spread. Like many young kids these days, our youngest is obsessed with the popular Aussie children’s TV show Bluey. For his recent fourth birthday he ummed and ahhhed between the Women’s Weekly train cake (he’s also obsessed with trains) or a Bluey themed birthday cake. In the end, Bluey won out!It’s a very hot Queensland day and Chilli and the kids are hanging out in the lounge room. Bluey, as is typical of a child, is talking into the fan, and tells Chilli she doesn’t want to brush her teeth as it’s boring. Chilli tells her that "boring things are important too", but Bluey denies it, to which Chilli tells her that she sounds like her father.

Ice your cake. I had plain coloured icing underneath the sand, and blue icing for underneath the jelly/ocean. This recipe makes one large, delicious rectangle chocolate cake (tin size approx. 38cm x 27cm). If you want to make a regular sized round or square cake, you will need to halve the ingredients and cook for approx. 30-35 minutes. Scoop out some of the set jelly and place in a bowl. Using a spoon, break up the jelly to create small lumps. Scoop jelly lumps onto the ocean section of the cake.We used modelling paste to cover the sides of the cake because it sets a little harder than fondant, making it easier to handle and more resilient. Place the sugar, water, cocoa powder and butter into a large saucepan. Bring to the boil, stirring regularly. Once boiled, take from the stove and let it cool down (until you can dip your finger in it). Stir in the bi-carb soda. Tip mixture into a large bowl then gradually beat in SR flour and eggs with an electric mixer, until there are no lumps. Place in a large greased/lined cake tin and bake in 180c fan forced oven for approximately 40 minutes.
