Despite being loaded with four different acidic components--vinegar powder, citric acid, lactic acid, and tartaric acid--the flavor of these seems to pale in comparison to other chips we tasted. They don’t have a very strong vinegar flavor and tend to come across more sweet than savory or tangy. We proceeded to taste each of our salty test subjects, one by one--with plenty of water in between, we might add! That green tinge that you sometimes see on a potato or potato chip is the sign of a compound known as solanine, which accumulates when these darkness-loving tubers end up getting too much sun exposure.
